S-shaped biscuits take their name from the typical shape which, in addition to being pleasing to the eye, allows for uniform cooking which gives the biscuit its typical crunchiness. The enveloping flavor is instead determined by the use of the so-called Sicilian cimino duci, or anise seeds.
